One of the most stressful decisions my husband and I have to make daily is what the heck we are going to eat for dinner. Neither of us is very creative in the kitchen. We also both hate to clean up after dinner. Who doesn’t? And it seems like we are never in the mood for the same thing. AGH! It’s so frustrating. I could go on and on, but I’ll spare you the drama.
One of my friends gave me a super simple suggestion that I thought was blog worthy. Preparing this meal takes 20 minutes, start to finish. Here’s what you need:
Ripe avocados- we used one and a half for the two of us; you can do one whole avocado per person if you’re hungrier
Quinoa- prepared per the instructions on package
Shredded chicken- we used Whole Foods Rotisserie chicken
Salsa- we made our own with tomatoes, onion, jalapeno peppers, garlic, salt, pepper, and lime juice
That’s it! Now, if you’re like me, you need very specific instructions so here goes! It’s impossible to over-complicate this.
Get the quinoa and water going. While it’s preparing to boil, dice up the stuff for the salsa. You can always make this ahead of time and put it in the fridge or you can use your favorite store bought, ready-made salsa. We’ve just found that our fresh salsa is so easy (even for us) and tastes so fresh! While the quinoa simmers (~10-12 minutes), half the avocados and remove the pit. Shred the chicken and put that aside.
Once the quinoa is ready, scoop some into the avocado, as much as you’d like. Top with chicken and salsa. I think you’ll be surprised how easy and delicious this simple summer meal idea is, not to mention how healthy!
